An ancient cellar of the twelfth century with stone walls and barrel vaults, located under a former Renaissance convent at the feet of the Berici Mountains, protected from the weather and climatic changes.
An ideal place to age cold cuts, which are, this way, enriched with unique aromas and flavors linked to the old times, is the place we chose to season our salami and our best soprèsse! Produced with even higher standards than those for our standard production, the excellences of our production are aged naturally in this ancient cellar and, after a long time, are brought back “home”, where they conquer the seal of “Salumi del Convento” that distinguishes our flagship products.
The scents and flavours of the purest tradition, together with the health safety of our time, are revived in our salami and in our convent soprèsse.
We offer them to you with pride!

Soprèssa del Convento dolce o con aglio

Our best soprèsse, after the initial drying in special rooms and a short period in the ageing rooms, are brought “in Convent”, where they best age and are left to mature slowly.

Available in two sizes, large from 2,5 to 3,5 kg and mignon size of about 1 kg, in both traditional varieties sweet and seasoned with garlic.

Salame del Convento dolce o con aglio

Like the traditional salame, the salame of the convent is characterized by its greater softness compared to the soprèssa.
The longer ageing doesn’t affect the softness and freshness, on the other hand it enhances these characteristics, combining them with the unique “convent” aromas.

Available in sizes of about 0.7 kg, in both traditional varieties sweet and seasoned with garlic.
